Mebbe I'm overthinking it. Pianos have 88 keys, synthesizers, etc...61? If you're playing sheet music (likely made for piano) HOW do you account for the missing keys whilst trying to play it on the keyboard?

The keys repeat themselves up and down the keyboard. So with smaller keyboards with less than 88 keys, you have a control that can switch the lower keys to extend down to where a piano would be. Same with the upper keys.
So you're not missing any notes really. You're missing octaves. And you can switch to lower or higher octaves on keyboard, so the keyboard will play the full range of the piano in sections.

Pondered that too, thinking of getting a beginner of some type to practice on road with (we actually HAVE an 88 key Korg at home). I could read music well enough to transpose it to guitar when I was a wee lad, I expect I can pick it up again
