They explain the basics pretty well. I'm not sure about the controls on your camera, but I would set it to aperture-mode and just let the camera do the ISO and shutter speed automagically. Failing that I would set it to manual mode, set the lowest ISO available, then open the aperture all the way (F-stop) and experiment with the shutter speed until I get the exposure I want. I would only increase ISO (basically electronic light amplification) if I can't get enough light onto the sensor using F-stop and shutter speed.

I've been watching lots of JooToob videos on taking product pictures and I think I've found settings that not only work, but don't require any editing other than cropping and adding color names. The lizard in Grapevine that I've posted several times turned out REALLY good and looks almost exactly like the bait I hold in my hand.
I'll post another sample later.

Several people have said that product pictures is one of the most challenging types of photography and I believe it.
One guy told me most folks use a Macro lens for product photography but I don't have one of those and they start around $400 and go up to $1799 or so.

I could see where a macro lens would be a big difference because you could focus so that only the product is mostly in the image. So the exposure will be set more exactly to the product instead of the big white background.
But really those pictures you've taken and even the ones with your cell phone will all work perfectly with just minor corrections to the shadows and highlights.

Took a bunch of pics this morning and some of them are blurred because of camera shake. The tripod isn't all that sturdy and touching the camera to take a pic makes it wobble so some of the pics are blurred. No worries on that, tomorrow I'll have a remote shutter release.
In the meantime, here's an untouched photo with ISO 100, aperture 5.1 and shutter speed 1/100.

I have most of the baits made for the pics and many of the pics taken. I still have to make the panfish specific colors and a couple other odds and ends but the biggest part of this project is now done.
I still have to add color names and then save the pics as jpgs but mass editing should make that process a breeze.
